1 LBS OF CHICKEN LEGS (or any type of chicken you prefer)
1 CUP GLUTEN FREE PANKO BREAD CRUMBS (mine was made with rice flour)
1/2 CUP CORN STARCH
(season chicken to taste-my mix included the following)
SEA SALT
GARLIC POWDER
BLACK PEPPER
GROUND RED PEPPER
SIRACHA POWDER
Pre-heat oven to 350 degrees. Line a backing sheet with foil and spray with non stick cooking spray. Place bread crumbs, corn starch, and seasoning in a large gallon size bag. Shake to mix. Place chicken legs in bad two at a time shaking to coat evenly, then place on prepared baking sheet. Once all chicken is on pan spray top of chicken with coating on non stick cooking spray and bake for 60-75 minutes ( until chicken is browned and cooked all the way through). Remove from oven and let cool slightly before serving. I enjoyed mine on the side of a salad, but pairs nicely with a wide variety of sides!
